The quantity of Academia Rară Neagră bottled wine is very limited – 4632 bottles. This number, in fact, is not a coincidence, but has its roots in the actual location of the Purcari terroir on the world map, being the place where the Rară Neagră grape variety is grown with dedication and care.

Aroma: the wine is perfumed with aromas of cherries and plums, and painted by nature with an intense ruby colour with purple reflections.
Tasting notes: this Rara Neagră wine has a velvety texture and a well-balanced taste that is characterized by a blend of fruit, tannins, and acidity. The wine has a long and elegant finish with currant hints. It possesses a velvety tannins with a taste that cannot be confused with any other wine.
Vinification: Academia Rara Neagră is produced using traditional winemaking methods. The grapes are handpicked and carefully selected for the blend. The wine undergoes maturation in clay amphorae, which allows for the wine to develop a unique character and enhance its flavor profile. After the amphorae maturation, the wine undergoes a short rest in oak barrels to provide an additional layer of complexity and texture. This combination of traditional and modern winemaking techniques helps to create a well-balanced wine with a complex and harmonious taste.
Food pairing: this Rara Neagră complements well all grilled red meat, smoked meat, and sausages.

VINIFICATION
70% Cabernet-Sauvignon, 25% Saperavi, 5% Rara Neagră
Made from grapes harvested and selected by hand, produced using traditional methods. Aged for 18 months in French oak barrique.

Aroma: this blend develops a complex and intense bouquet, with notes of sweet fruits – ripe plums and figs – which develop over time, coupled in the end with fine flavours of spices and saffron.
Tasting notes: this full bodied red possesses a deep and velvety taste, that reminds of the same fruit flavour with ample notes of delicate tannins and a long sensual aftertaste.
Vinification: Negru de Purcari is produced from grapes harvested and selected by hand under traditional methods. The wine is aged for 18 months in French oak barrique.
Food pairing: this dry red wine pairs well with noble ripened cheeses, baked deer roulade filled with figs, roulade of pheasant with chestnut puree.
